La Kitchenette Souris : Summer Borscht

A classic Mennonite staple... 

This is my favorite soup/borscht ever.
I do not seem to get sick of it.
When we make it, I eat it every day sometimes...

It really is quite easy & simple & is an excellent soup for all seasons.

Goes really well with homemade bread or biscuits, filling, and delicious.


Summer Borscht


7 cups water
4 cups cubed ham
4 cups minced onions
4 cups cubed potatoes
4 Tablespoons fresh parsley
1 Tablespoon black pepper
1/4 cup fresh dill
2 teaspoons salt
1/4 teaspoon Liquid Smoke
2 litres buttermilk

Place parsley & pepper in water & bring to a boil.
Let simmer for about 15 minutes.

Add ham.
Let simmer another 15 minutes.

Add potatoes, dill, salt,  & onions & bring to a boil.
Cook for about 35-40 minutes or until the potatoes are soft & the ham is tender.
It will start to turn slightly yellow.

Reduce heat.
When soup is no longer boiling, slowly pour in buttermilk, stirring constantly.
Add Liquid Smoke.
Stir well.

Bring to a boil & let it simmer there for about 20 minutes.

Then dish up & enjoy!

You might wish to add a little milk to the individual bowls, to make it more creamy & cool it down a tad.
