La Kitchenette Souris: Apple Fritters

I have been extremely lazy in getting recipes & other kitchen creations onto here promptly....

I have also been a bit lazy & have doing things like tortillas or grilled cheese sandwiches.
They still count as cooking, but nothing worth photographing & no real "recipe" to share.
Basically, I just made sure I was doing something in the kitchen & it was edible. HAHA

But I am still on track with my 365 in 365 Challenge, and decided to make today all about blogging, so hopefully in the next few days, lots of new posts will be popping up on here.

Beginning with this one, Apple Fritters.

They are not very sweet... next time I might add a little more sugar,  a dash of cinnamon, and a little less apple then the recipe says.

However if you are looking for a more plain, good dessert, this is it.

Deep frying is tricky, though, and a lot of work. Careful not to get burnt as it does sizzle & "pop" quite a bit when the batter hits the pot!

Apple Fritters

1 cup flour
1 1/2 teaspoon baking powder
1/2 teaspoon salt
1 1/2 cups apples, finely chopped.
2 Tablespoons sugar
1 egg beaten
1/2 cup milk, plus 1 Tablespoon

Sift dry ingredients together.

Beat egg & add milk.
Pour into dry ingredients.
Stir until batter is smooth.

Pare apples & dice or slice very thin.
Add apples to batter & blend together.

Drop by spoonfuls (small balls, otherwise they don't cook through... so like a little less than a Tablespoon) into deep hot fat.
(I used canola oil)
Fry until a golden brown on all sides, or longer to ensure they are cooked through.

Makes 12-15 fritters.
