These are simple, easy, yummy cookies.
If you have someone in your house who adores oatmeal, make these!
You could even adjust some things to make them healthier, if you wanted!
1 cup butter, softened
1 cup white sugar
1 cup brown sugar
2 large eggs
1 teaspoon vanilla extract
2 cups all purpose flour
1 1/2 teaspoons ground cinnamon
1 teaspoon baking soda
1 teaspoon salt
3 cups quick cooking oats
In a large bowl, beat together the butter & sugars.
Beat in eggs one at a time, then stir in vanilla.
Sift flour, cinnamon, baking soda & salt into a medium bowl.
Stir the dry ingredients into the creamed mixture.
Mix in the oats.
Cover & chill the dough for at least 1 hour.
Preheat oven to 375F.
Grease baking sheets.
Roll the dough into 1 inch balls & place them 2 inches apart on the baking sheets.
Bake for 8-10 minutes, until light golden brown.
Cool on wire racks.
