La Kitchenette Souris: Apple Muffins

These are absolutely amazing!

The apple flavor is more subtle because you use grated apple versus apple chunks & the toppings really add excellent flavor.

Another perfect November recipe.

Apple Muffins

For Muffins:
1/4 cup shortening
1/2 cup sugar
1 1/2 cups flour
1 egg, well beaten
1/2 cup milk
3 teaspoons baking powder
1/2 teaspoon salt
1 cup fresh grated apple

For Topping:
1/2 teaspoon cinnamon
1/3 cup brown sugar
1/3 cup coconut (or chopped nuts)

Cream shortening, sugar & egg. 
Add milk & stir.
Then add dry ingredients & mix until well blended.
Fold in grated apple.

Place in paper cup lined muffin tins ~ fill cups around 2/3s full.
Should make 1 dozen muffins.
Sprinkle topping on thickly.

Bake at 375F for 20-22 minutes, or until a toothpick comes out clean.
(I believe mine were closer to 25 minutes)
