La Kitchenette Souris: Rocky Road Squares

These are both easy & yummy.

The perfect thing to quickly toss together & have ready in an hour or two. 

They do have nuts in them however, but you can leave the nuts out for allergy reasons or what have you, and then they are like a really delicious smore, basically. 

Another Christmas tradition in my household. 


Rocky Road Squares


12 double graham crackers (or as many as you need to cover the bottom of the baking sheet)
2 cups mini marshmallows
1 package semi sweet chocolate chips (I use less than the whole package, maybe around a cup & a half)
1/2 cup salted peanuts or mixed nuts
1/2 cup butter or margarine
1/2 cup brown sugar
1 teaspoon vanilla extract

Preheat oven to 350F.

Arrange graham crackers in a single layer on a baking sheet.
Sprinkle with marshmallows, then chocolate chips & nuts.

In a small saucepan, combine butter, sugar & vanilla.
Cook over low heat, stirring constantly, until sugar is dissolved & butter melted. 
Drizzle evenly over prepared graham crackers.

Bake 10-12 minutes.

Cool for a few minutes, then cut into squares.
Allow to harden thoroughly in cool area for about an hour or two.
( I suppose you could just pop them into the fridge for a bit as well)

These freeze well, for up to a month. Thaw before serving.
