La Kitchenette Souris: Spice Cake & Caramel Frosting

The cake is absolutely delicious & I will for sure be making it again!

This time I served it with this frosting, but it is very sweet, so I think next time I will serve it with whipped cream or even without any topping.

The frosting recipe is large, so if you are making it only for this cake, halve the recipe. 

Don't forget to sprinkle a little cinnamon on top before serving for that extra flare!


Spice Cake


1/2 cup butter
1 cup white sugar
2 eggs
1/2 cup molasses
1 cup milk
2 1/4 cups flour
2 1/2 teaspoons baking powder
1/2 teaspoon salt
1 teaspoon cinnamon
1/2 teaspoon cloves
1 teaspoon vanilla

Cream butter and sugar. Add eggs and molasses. Beat.

Add milk and vanilla slowly and beat.

Sift dry ingredients together and add to creamed mixture.

Bake at 350F in a 9x9 inch pan for approx 30 minutes. 
(I believe I baked mine for about 40 minutes)


Quick Caramel Frosting

1/2 cup butter
1/2 cup brown sugar
1/4 cup milk
2 cups icing sugar

Melt butter and sugar in a heavy bottomed pan, stirring over moderate heat until sugar is dissolved. 
Add milk and blend.
Cool.

Beat in icing sugar until thick enough to spread. 
If too hard, add a few drops of milk.
