La Kitchenette Souris: Bran Muffins & Chocolate Chip Bars

Today I will be sharing with you one "old" favorite recipe that I have made many, many times, and one new recipe I tried for the first time this past week.

The first one is Bran Muffins, which are a classic breakfast food.
These ones are moist and soft and wonderful.
They freeze very well!

The second one is Chocolate Chip Bars, which are, as I said on Instagram "...a little bit ooey, a little bit gooey, but definitely not patooey..."
They are soft, slightly sweeter, and very yummy! 
It will be a repeat recipe~ the first batch barely lasted a day.


Bran Muffins


2 eggs, beaten
1 cup sugar
1/4 cup molasses
1/2 cup oil
2 cups milk
2 cups white or whole wheat flour
1 1/2 cup bran
1 teaspoon salt
2 teaspoons baking soda
2 teaspoons baking powder
1 cup raisins (optional~ I never add them)

Mix eggs, sugar, molasses, oil, and milk. 
Add dry ingredients.

Fill muffin cups about 3/4s full.

Bake at 400F for 20 minutes (in my oven it's actually 19, so possibly 17-20 minutes).


Chocolate Chip Bars


1 cup flour
1/2 cup butter
1/2 cup brown sugar

Mix and pat into 9x13 inch pan.
(you may want to grease the pan with just a little butter)
Bake 10 minutes at 350F.

Blend Together:
2 eggs, beaten
1 teaspoon vanilla
1 cup brown sugar
2 Tablespoons flour
1 teaspoon baking powder
1/2 teaspoon salt

Pour this over first mixture.

Top with approx 1/2 cup chocolate chips, or however many you think.
(I always do less, as we like more a hint of chocolate in such desserts.
You can also put on walnuts along with the chocolate chips or instead of.)

Bake 20 minutes at 350F.
