La Kitchenette Souris : Green Beans with Lemon & Garlic

This is a lovely, simply recipe for fresh green beans! 

A little spicy, but an excellent and healthy side dish. 

Looking forward to summer when I can get some fresh beans out of our garden & make this!

Oh and when you are cooking it, put on a bib. The smell is slobber worthy.

Green Beans with Lemon and Garlic


2 pounds fresh green beans, ends trimmed
1 Tablespoon extra virgin olive oil
3 Tablespoons real butter
2 large garlic cloves, minced
1 teaspoon red pepper flakes (I used dried chili peppers)
1 Tablespoon lemon zest (I squeezed a fresh lemon into it~ much healthier and the taste is way better)
Sea salt & freshly ground black pepper to taste

Blanch green beans in a large stock pot of well salted boiling water until bright green in color and tender, roughly 2 minutes.
Drain and shock in a bowl of ice water to stop from cooking.

Heat a large heavy skillet over medium heat.
Add the oil and butter.
Add the garlic and red pepper flakes (or powder) and saute until fragrant, about 30 seconds.

Add the beans and continue to saute until coated in the butter and heated through, about 5 minutes.

Add lemon zest and season with salt & pepper.

Serve immediately.
