La Kitchenette Souris : Romano Salad & Balsamic Vinaigrette

This is a nice fresh twist on some classic vegetables & would make an excellent salad to take to a picnic or gathering of any kind.

Cool & crisp, and quite easy to make. 

Since the recipe called for a vinaigrette dressing, I thought I might as well try another new recipe & make my own. 
Definite repeat for a vinaigrette dressing, super healthy & tasty!


Romano Salad


5 celery stalks, finely chopped
1/2 pound mushrooms, finely sliced
1/4 cup Romano or Parmesan cheese, freshly grated
Vinaigrette dressing

Mix all ingredients in a salad bowl, chill well, & toss lightly with a bit of vinaigrette dressing when ready to serve.

Garnish bowl with some chopped parsley & a light dusting of paprika.

Serves 6.


Balsamic Vinaigrette

1/2 cup extra virgin olive oil
1/2 cup balsamic vinegar (white or dark)
1 garlic clove, crushed
1 teaspoon mustard powder
Pinch of salt & black pepper
1 teaspoon minced fresh herbs, optional
(I tossed in some summer savory & oregano)

In a small bowl, whisk together olive oil, vinegar, garlic & mustard powder.
Season to taste with salt & black pepper.
Stir in minced herbs if desired.
