La Kitchenette Souris: Old Fashioned Molasses Cookies

These are really yummy~ the applesauce adds a nice flavor!

They did seem a little bit complicated to me, when following the recipe exactly, so I've made a few changes to make it a little simpler for you & still have wonderful results.

Old Fashioned Molasses Cookies


1/2 cup unsweetened applesauce
1 1/4 cups granulated sugar
6 Tablespoons butter, softened
1/4 cup dark molasses
1 large egg
1 cup all purpose flour
1 cup whole wheat pastry flour
2 teaspoons baking soda
1 teaspoon ground cinnamon
1/2 teaspoon ground ginger
1/2 teaspoon ground cloves
1/2 teaspoon salt

Cream applesauce, sugar & butter in a medium bowl, using an electric mixer, until well blended & sort of fluffy, about 3 minutes.
Add the molasses & egg & beat well to combine.

Combine flours, baking soda, cinnamon, ginger, cloves & salt in a separate bowl, stirring well with a whisk.
Gradually add the flour mixture to the wet mixture, beating until blended.
(I just used a wooden spoon)
Cover & freeze the dough for 30 minutes, or until firm. 

Preheat the oven to 375F.
Grease baking sheets.

With moist hands, shape the dough into 1 inch balls.
Roll the balls in the remaining 1/4 cup of sugar.
Place them about 2 inches apart on the baking sheets.

Bake for 8-10 minutes.
Cool on wire racks.
