La Kitchenette Souris : Spicy Sauteed Peppers

Tried a new side-dish recipe this week, along with making 2 favorite recipes of mine previously shared on the blog.

A little shot of the peppers & roast being prepped...

Here are the links to the:

{Both of which I highly recommend since they are classics that never get old!}

This pepper recipe is fairly basic & healthy & has a nice flavor, although it is "zippy" so if you don't like spicy or hotter foods, then this one is not for you!

Don't forget to remove the seeds from your peppers!

Spicy Sauteed Peppers

2 Tablespoons olive oil
1 clove garlic, finely minced
1 small Jalapeno pepper, chopped
1 large red pepper, sliced
1 large green pepper, sliced
1 large yellow pepper, sliced
1/4 red onion, sliced
Zest & juice of 1/4 lemon
Salt & Pepper to taste

In a pan, heat 1 Tablespoon olive oil, then toss in garlic & cook for about 30 seconds, just to release the flavor.

Add all the peppers  & cook for 1 minute.

Add the onion & lemon zest, then continue cooking until peppers are beginning to turn tender.

Remove from heat, squeeze lemon juice on, season with salt & pepper, then drizzle with remaining Tablespoon of olive oil.

Toss lightly together & serve.
