La Kitchenette Souris: Kid Tested Gingerbread Cookies

Well I already know several of you have snagged this recipe from me & it has now become a family tradition in your home, as well as mine!

This is without a doubt the best gingerbread cookie recipe there is.
I have had a few different ones, but this one tops them all.
I can't really explain it. 
They just do.



Really, you must try them!!!! 
And make them with your kiddos~ they will love it! 


Kid Tested Gingerbread Cookies


1 cup brown sugar
1 1/2 teaspoons cinnamon
1 1/2 teaspoons ground ginger
3/4 teaspoon baking soda
1/4 cup boiling water
1/2 cup margarine, softened
1/4 cup cooking molasses
2 cups flour (plus approx 1 more cup)

Place sugar, spices, baking soda & margarine in a large bowl.
Stir in water until sugar is dissolved & butter is fairly melted.
Stir quickly!

Add first 2 cups flour & knead with hands, adding little bits from the 1 remaining cup of flour as needed. 
You can be a bit generous as often times this dough will be a bit sticky.

When dough becomes stiff enough, place half of dough on a lightly floured surface & roll out to about 1/4 inch thickness. 

Use a floured cookie cutter to cut out shapes. 
Place on a greased baking sheet & bake at 300F for 15 minutes, or perhaps a minute or two longer if they don't seem quite done.

Makes around 34 medium cookies.
