La Kitchenette Souris: Mini Peanut Butter Cups

A Christmas favorite in our house ~ let me warn you, these are very dangerous! 
Especially when they are warm!

Once you have made these & tasted them, I promise you, they will be made again & likely become a tradition in your home too. 

They are a lot easier than they look so perfect for a novice chef. 


Mini Peanut Butter Cups


1/2 cup butter or margarine, softened
1/2 cup smooth peanut butter, softened
1/2 cup brown sugar
1/2 cup sugar
1 egg
1/2 teaspoon vanilla extract
1 1/2 cups all purpose flour
1 teaspoon baking soda
1 1/2 cups mini chocolate chips (semi sweet)

Preheat over to 375F.

Beat butter, peanut butter & both sugars until light & fluffy.
Add egg & vanilla, mixing well.

Combine flour & baking soda; add to butter mixture, mixing well.

Roll into 1 inch balls.
Place in lightly greased miniature muffin pans.
Press thumb into center of each one, to create a small indent, sort of like a little hollow.

Bake for 12-14 minutes.

Remove from oven & immediately place 1 teaspoon of chocolate chips in center of each cup.

Allow to cool slightly & remove from muffin pans. 

Makes: 42 cups.
