La Kitchenette Souris: Healthy Fish 'n' Chips

With Mom's new diet, I am making up a lot of my own new recipes, which I thought might come in useful for those of you who are also on very restricted diets & are looking for ideas for meals. 

I came up with a way to make a very healthy Fish 'n' Chips meal, and it tasted great, so that is definitely a bonus! heehee

Will be making this again. 

P.S. The green beans are from our garden last year. 


Healthy Fish 'n' Chips


Making The Fish:

7-8 pieces of fish 
(I used fish my Grandpa caught~ Pickerel Fish~ but you could use anything, I would think, except salmon)
6 Tablespoons olive oil
1/2 cup unsalted butter
1 cup organic, freshly milled whole wheat flour
3 Tablespoons dried summer savory
1 Tablespoon dried oregano
1 teaspoon sea salt 

Mix dry ingredients & place in bowl.

Brush olive oil onto fish & roll in flour mixture.

Place butter in frying pan~ when it is melted & sizzling, place fish in pan. 

Fry on each side around 11 minutes or until fish is slightly crispy & falling off the bones. 

Making The Chips:

6 large potatoes, peeled & cubed
3 garlic cloves, peeled & thinly sliced
6 Tablespoons olive oil
3 Tablespoons dried summer savory
Sea Salt & freshly ground Black Pepper to taste

Mix all together in a bowl, until potatoes are evenly coated.

Place all in a baking pan & bake at 375F for 30-40 minutes or until potatoes are golden & slightly crispy.
Turn every 10-12 minutes!
