This recipe is really quite easy & has excellent flavor.
Also, it can be on the cheaper side & you can make it in larger quantities to feed more people, if need be, without much hassle.
I would say it is one I'd make again.
I served it on white rice that I added butter & fresh oregano too.

Italian Sausage Stir-fry
6 links Spicy Italian Sausage
(you could use sweet or plain if you prefer)
2 Tablespoons butter
1 yellow onion, chopped
1/2 red onion, chopped
4 cloves garlic, finely minced
1 large red bell pepper, chopped
1 large green bell pepper, chopped
1 teaspoon dried basil
1 teaspoon dried oregano
A dash of white vinegar
Salt & Pepper to taste
Place the sausage in a large skillet over medium heat & brown on all sides.
Remove from skillet & slice.
Melt butter in the skillet.
Stir in the yellow onion, red onion & garlic.
Cook 2 to 3 minutes.
Mix in peppers.
Season with basil & oregano.
Dash on vinegar.
Continue to cook & stir until peppers & onions are tender.
Return sausage slices to skillet with the vegetables.
Reduce heat to low, cover & simmer 15 minutes, or until sausage is heated through.
